Healthy kale salad featuring shaved fennel, chopped honeycrisp apple, toasted pepitas, dried cranberries and goat cheese, tossed in a lemony dressing. This recipe yields 2 large, full-meal salads or 4 side salads.
  • 1 very large bunch of kale
  • 1 medium Honeycrisp apple

BBQ Corn Salad

1/4 cup olive oil

2 tablespoons white wine (or white balsamic) vinegar

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

4 ears sweet corn, grilled and cut of cob

i pint grape tomatoes, halved

1/3 cup green onions, chopped

1/3 cup flat leaf parsley, chopped


Whisk together olive oil, vinegar, sugar, salt and pepper

Mix until just combined with corn, tomatoes, onions and parsley.  Serve warm or chilled.

 (10 oz) hulled strawberries

 (10 oz) caster sugar

Juice 5 lemons

Still or sparkling mineral water, to dilute

Sliced limes and strawberries, and sprigs of mint, to serve
